Corn Rice, Alternative Business Culinary Traditional Food
Maize (Zea mays) is one of the cereals as well as strategic and economic value have the opportunity to be developed due to its position as the main source of carbohydrates and protein after rice (Purwanto, 2006). In line with this Zubachtirodin et al (2006) also added to the national economy, the second largest contributor of maize after rice in food crops. Corn also is a plant that is relatively more resistant to water shortage than paddy so that the planting can be done after the planting of rice, namely in the dry season.
Maize has great potential as an alternative staple foods other than rice. This is caused by limited resources, especially land that became the problem of irrigation on rice production, the relative does not occur in corn. On the other hand the composition of the nutrient content of corn has nutrients that is more complete than the rice. Aside from being a major source of carbohydrates, also contain other nutrients such as: Energy (150.00 cal), protein (1.600 g), fat (0.60 g), carbohydrates (11.40 g), calcium (2.00 mg), Phosphorus (47 , 00mg), Fiber (0.40 g), iron (0.30 mg), Vit A (RE 30.00), Vit B1 (0.07mg), Vit B2 (0.04 mg), Vit C (3.00 mg), Niacin (60mg), with 74.26 g of carbohydrate per 100g edible portion yield the total energy of 365 Kcal (USDA, 2008) the most potential as an alternative staple food.
Diversification of staple foods with corn as an alternative to rice, to be followed by the design of processing corn to increase consumer acceptance. Had the processed products may include some aspects of the above is a rice corn. Corn rice has long been known by the people but because the process of preparation of the forms of corn pipil until rice is long, including repeated pulverization and drying processes, hence its acceptance as a staple food rice is lower than usual. Therefore, the processing of maize into rice corn shorten the time required for preparation of corn into corn rice. Rice and maize by Richana Suarni (2007) is the result pemberasan process which includes grading, milling, hulling and polishing with dry corn pipil raw materials.
